It Was Just a Year Ago

Thursday, September 21st, 2006

Me and the kids will never forget Hurricane Rita. The big one that missed us. But for a few days it closed schools and jobs. Made us abandon our home and flee away from the coast. For a few days we imposed upon Flametoad’s home. We will always be thankful to him and Mrs. Flametoad for taking us in. Also thankful that my missus could make the drive from Detroit to Toronto for the weekend, since flying home would have not been possible.

For the sake of memory I have been reading those posts from last year. Here are the posts that came from that time. Before the Storm I, Before the Storm II, Before the Storm III, Before the Storm IV, Before the Storm V, The Storm Missed Us and Home Again. I Like to Be Here When I Can. Give them a read if you have the time.

Amazing how much has happened since then. I reread those comments and most of those bloggers still visit me today. A couple have disappeared and I wish them well. Some don’t post as often as back then but that is how life goes. Wonder what will happen over the next year? No more hurricanes though. Just too much to deal with.

Alaska Cruise Day Three Dinner

Tuesday, September 19th, 2006

Each night the International Dining Room had a theme. On this night we had an Italian theme. The service personnel also wore special uniforms that looked very Italian too. Kick myself for not taking their pics. Had not established a relationship with the waiters yet.

Family-dinner.jpg

Now my wife and my siblings all gathered round the dinner table with the parents for this evening’s meal. #1 was responsible for assigning us to one of our three tables and he moved us around each night. It was nice to watch them sit around and yell at each other and slap their siblings upside the head just like they did so many years ago in Kowloon. (No one really hit each other, but they were loud in a good way. hehe) I sat at the kids table so you know we were having fun too.

Wine-water-and-bread.jpg

Every meal needs wine and water. Right? How else can you wash down those lovely breads they bring?

Olive-Oil-and-Balsamic-Vine.jpg

Every meal they ask what salad dressing I prefer. I’m trying to be a good boy and I requested olive oil everytime. The olive oil is quite shy and would not come unless the balsamic vinegar came along too.

Salad.jpg

And this was the Italian garden salad that got splashed by a few drops of said olive oil. The nuts were quite nice. Crunchy, crunchy.

Seafood-Appetizer.jpg

The appetizer was a seafood teaser. Mussels, shrimp, scallops, along with crab bits smothered in a creamy sauce. Very smooth sauce. It added to the seafood without overpowering it or burying the flavor.

Chicken-and-Filet.jpg

I ordered some veal with filet also. I think that is Alfredo sauce, though I cannot recall at this minute. The stuffed tomato was quite nice and the broccoli was crisp and crunchy. Wonderful, as I hate chewy soggy broccoli.

Shrimp.jpg

My daughter had shrimp with a primavera sauce. I stole one shrimp and it was worth the tears it caused. muahahaha

ice-cream.jpg

When daddy’s girl starts crying a little vanilla ice cream makes everything so much better. Would it make you feel better too?

Tiramisu.jpg

And yes. The best part of all. My dessert. Finally. After months of listening to LB and friends praise the delicious quality of tiramisu, I finally get my piece and eat it too. So divine. So smooth. So orgasmic.

Tiramasu-Bliss.jpg

See what it did to me. Now I need to find more. Or better yet. Learn how to make it . Hmmm…

After dinner we rushed over to the theater to catch the show. They had a song and dance routine and then Willie Tyler, the ventriloquist, and his pal Lester entertained us. Actually my missus left as he performed the first night in theater. But I liked him. He has been on TV a few times and it was just neat to see him in person. Though I felt bad. Everytime he did a song I would nod off. And I was sitting on the third row. Ooops! Not bored. Just stuffed to the gills and ready to get some shuteye.

I needed the rest. Why? So I can explore Skagway, Alaska in the morning.

Presents, Cookies, and More Alaska. Okay Mostly Food!

Sunday, September 17th, 2006

Check this out. From the Great White North I have been blessed with some goodies and a post card of downtown Calgary. Cool, huh? Thanks Fantasyflier. I was totally not expecting this. Now I can get a taste of those chili crabs I’ve heard so much about. :)

I used our baby grand piano for the back drop on the photo. And look friends. You can see my ceiling fan too. hehe. Oops!

The missus cooked some cookies. Yum. It’s those Toll House brand cookies. They melt in your mouth, or your hands if you’re too slow.

And look what those cookies attracted. Not one. But two. Thats right I caught a pair of crumbsnatchers. And they were snatching those cookies like the big fat man in the house might eat some if they did not act quick.

Fog-On-Glaciers1.jpgFog-on-Glaciers-2.jpgFor-on-glaciers-2.jpg

Those of you who have been following this blog can recall that the Sapphire Princess is cruising through Glaicar Bay. And you may recall the great fun I recounted as we listened to ice break and felt chill winds freeze our noses. Well this adventure from the deck of a ship gets a soul hungry.

So when one gets hungry on the Sapphire Princess and the clock is nearing the hour or three and thirty there is only one recourse. Make your way to the Emerald Room for High English tea. And so we did.

Branda-and-Jerry-English-Te.jpg

Me and the missus were certainly up for some finger food.
Cici-tea.jpg

My niece enjoyed the hot tea. It drove away the chills of Glaciar Bay and thawed out a smile.
Steph-Speak-to-the-Hand.jpg

My other niece was feeling less than photogenic. Cannot blame the dear girl, as ice hung down from her ears and nose. She said something about talk to the hand.

But here are the photographs that everyone really wants to see. Food!!!

Croissant.jpg

The lovely little croissant with a chicken salad and walnut concoction. Blissful.

Finger-Sandwiche.jpg

When you’re in Alaska you can never eat enough salmon. And they helped us get our daily ration at tea.

Tuna-Salad.jpg

And then there was tuna salad for variety.

Scones.jpg

And when they served these. Well honestly. I could not help but think of May and her scones. Though I’m sure these did not taste as good as the one she bakes. The cream and ham were devine too.

Perspective.jpg

Now here is question. Why do you need a fork at tea? A spoon. A knife. Sure. But a fork? Oh well.

Cookie.jpg

What are those things called. They are to die for. They just melt in your mouth and it’s a pleasant explosion guaranteed to make you get as close to Nirvana on Earth as possible.
Full-Plate.jpg

And with a plate of these you cannot go wrong. So filling. Hmmm… And dinners at 8 huh?

Thoughts on World Peace

Tuesday, September 12th, 2006

Many bloggers have mentioned how they long for world peace. As a former soldier I would very much like to see peace all over the world. Soldiers suffer a great deal in their profession. In my country they do so freely and with the knowledge that they may be sacriced. But they are willing to offer their blood in exchange for freedom.

While it would be easy to pray for world peace I find that it would be a prayer unanswered. As a Christian I recall Jesus on the Mount of Olives where he is quoted in Matthew 24:6 to have said, “And you will hear of wars and rumors of wars. See that you are not alarmed, for this must take place, but the end is not yet.” This tells me that man is not capable of peace on his own terms. War will be with us always.

Rather than pray in futility and frustration for that which cannot be, I choose to pray in a different way. My prayers are for the safety of my country’s military. I ask God the Father to provide them with the best tools to do their job, the sustenance to keep them healthy and capable in the field and the energy to carry out their mission and desire to obey the lawful orders of their commanding officers. As long as there are men, that choose violence to promote their ideals a strong military is required. Without a wall of bayonets to secure freedom there is nothing to insure any measurable or lasting peace.

A right thinking country with a strong military deters tyrants and inspires them to remain quaking behind their walls. In the fourth verse of the Star Spangled Banner Francis Scott Key wrote, “Then conquer we must, when our cause it is just”. Hard words, but a doctrine that must be followed if freedom is to be secured. That is what should have been cited before going into Iraq, rather than the hunt for WMDs. Much easier to rally round that thought and not have the lack of WMDs hurt the American image down the road.

But there was no choice but  to go to Iraq. When America hides behind its shore or appears weak, great wars start. Appeasement has never led to peace. I challenge anyone to show me a time in history where a dictator respected the peace of a nation or people he considered weak. I am always eager to learn something new.

I hate the thought of war. But a loss of freedom instills a greater fear. May my brothers-in-arms be safe, complete their mission, and return home to their families whole and happy. I hope those that would attack freedom are killed or repent their vile intentions and find peaceful pursuits. Until they change or die there can be no peace. A peace the world would find most welcome.

Five Years Ago, Today, and Tomorrow

Monday, September 11th, 2006

Tuesday morning. Running late to work. The world is normal. The radio is tuned to a local talk show station, politics and traffic. Wishing all the cars on the Southwest Freeway would part and allow me through.

Then a news break interrupts the show. A plane has crashed into one of the towers of the World Trade Center. I’m thinking what a tragic accident. Wondering if NYC was fogged over, though I had no knowledge of their weather patterns. Thinking the plane’s radar should have picked up the building. Plane must have had some major problems.

Traffic moves no quicker and I’m going to be late. Nothing new. Then another plane strikes the other tower. And then I knew the world was changed and it could only be for the worse. I can believe there is a chance for one plane to collide with a building. But two is far too coincidental. I recalled a Tom Clancy book titled, Debt of Honor. At the end of this story a suicidal pilot crashes a jetliner into the Capital, while the president is addressing the Congress.

I drove on. No need to stop for coffee or donuts. The desire for both have fled. Then another report on the radio. Now the Pentagon has been struck. I look toward downtown as I wind along Shepherd near Buffalo Bayou. i see no aircraft heading toward our skyscrapers.

A few minutes later I park in my spot at Coffer Corporation. I run across the street and drop my lunch and daytimer on my desk. I go next door and ask the clerk if she will turn on her TV? She has no clue what’s happening. I tell her the news and she turns on her little black and white TV. Smoke spews from the World Trade Center. Looking like the pollution vomiting out of the factories of 19th Century America.

We watch shots of people fleeing the towers. I wonder how many people could be inside those buildings. They both can hold tens of thousands of people. People that dropped the kids off at school or daycare. Scratched the family dog behind the ears before rushing to catch a train to the city and the prospects of a day’s hard work. My boss comes and no one thinks of work or financial statements. Some things are bigger than work. This is definitely one of them.’

Then the situation became even more horrid. Debris is constantly falling from the towers. But then a closer picture reveals that some of the debris is human and my stomach knots. Once again the thought comes back. Who would do this? My gut instinct leads me to think of muslim terrorists. After all they tried to destroy one of the towers before. But I did not want to judge too quickly, as thoughts of Oklahoma City also stayed close to mind.

And then one of the towers collapsed. No more sturdy than a house of cards. Steel turned to toothpicks in the heat of burning jet fuel. The thought of those deaths floored me. And then the other building went down. I returned to my desk and started researching news. Trying to catch the early reports. I had to know more of what was going on.

Then I thought about the kids and my missus in Detroit that day. I called the school to see how things were. Asked the secretary if I should pick the kids up early, but they said the day was proceeding normally over there. So I let them stay in class. I called the missus and talked with her. We wondered when she could return home. Air traffic became grounded pretty quickly. Nothing we could control. Just have to wait and see.

The days passed. The missus came home. The kids school continued. We learned of Osama Bin Laden and his hatred for American and the freedom to choose religion. President Bush came out talking tough and his actions were tough too. The Taliban in Afganistan fell shortly afterwards. Then Saddam Hussein was defeated in Iraq. Things seemed on the up. For a few days the politicians seemed to forget about politics. Americans were just, Americans.

Now it is five years later and peace in Iraq is brutal. Suicide bombers and IEDs kill indiscrimantely, Coalition Forces and Iraqis alike. We care more about appeasing the media and pacifistic countries that are scared to fight, rather than seeking the enemies of freedom and killing them. And thats what should be done to them. They should be found and killed. They are not soldiers representing a nation, but criminals hijacking a religion to force their own agenda. If they represent a nation would that nation be so bold as to announce itself. And then we could afford these thugs the status of prisoners of war. We could also invade that nation and step on the snake’s head and end all of this hositility.

But what saddens me the most is that Americans have forgotten 911. They sit idly by allowing their representatives in the Congress to politicize the war and endanger all of us. Problem is the same people that protested the war in Viet Nam are now working in the federal government and they seek to hurt the President no matter how much it might also hurt the American citizenry. I’m tired of dissension in the ranks.

What happened to the anti-sedition laws of this country? Has the American Civil Liberties Union (ACLU) castrated our ability to protect the homeland. We have open borders. If a person has the will they just need to enter Mexico and sneak across our border. They are provided with maps on where to cross. There are directions on how to avoid the Border Patrol. There are idiots on our side of the border that leave water out to facilitate this illegal migration. What is to keep terrorists from following these routes? Oh. They have found muslim prayer rugs along the border. So maybe they are here already. Waiting for the time to kill.

I want President Bush to start sounding like he did after 911. Maybe the elections are toning him down. But I think an honest message directing us toward a victory could only help. Especially after the Democrats were so upset about Pathway to 911. It is frightening to have a political party and former President threaten the American Broadcasting Company (ABC) with sanctions and pulling their licenses. Shouldn’t the ACLU been helping ABC? Was unaware if they were, and of course *sarcasm alert* we know the ACLU does not have an agenda *end sarcasm alert*. The movie still aired last night and finishes tonight. Unaware if the film was modified to appease the Democrats who sounded very Stalinistic last week. This is why every American needs to own a gun. Maybe more than one. I don’t want to live in Amerika. I refuse to.

I was on the verge of becoming totally apolitical. There are times when I cannot see the difference from a Democrat and a Republican. They have all been spending money like a drunken sailor in a whore house. But when it comes to national defense, I realize that the Democrats will never be the answer. They will appease the Iranian Nazi into starting World War III resulting in millions of deaths. Our world does not need the second coming of Neville Chamberlain.

Liberals may say not enough is being done on domestic policy. But I live in the sovereign state of Texas and I want the Texas Governor and Congress to deal with these local issues. The feds need to tend to their knitting. And that knitting means protecting my nation’s borders and giving my children a future that does not include their premature deaths. We need to stomp on some snake heads and get along with business. Otherwise we shall suffer 911 II. Please tell me that is not what is going to take to find some real Americans.

The Last Meal

Wednesday, September 6th, 2006

I was tagged by Angeleyes with this meme. This was her first meme and her first passing of tags. How could I refuse her? Plus she has the cutest baby boy. You need to visit her Rambling Moo blog just so you can peek at his cute pictures.

But this meme deals with the five things you eat before you bite the bullet and move on to the manna and honey of the next life.  So without further delay here I go.

I will start off with Char-Siew Bao. I love those steamed buns full of tasty barbecue pork. The bun melts in my mouth and sauce dribbles over my tongue. A wonderful culinary delight.

Next I want a hamburger. But not just any hamburger. I want a triple meat triple cheese What-a-Burger with all the fixings, to include jalapenos and grilled onions. And it has to come from the Brenham restaurant where they make the best burgers anywhere.

Then I want to jump back on the Sapphire Princess and eat that fresh silver salmon. Fish has never tasted so delightful. I eat salmon a lot down here, but that Alaskan salmon is so delicious.

Next I want to have Korean barbecue bulgogi with kimchi on the side and all of the other little plates they serve. I just love the smell as the beef cooks at the table-side stove. Heavenly.

And to finish the meal. Before I step in the coffin I want Peking duck. The whole bird. Not sharing la. Sorry. Last meal ya know.

And plop. Then I can die with a full belly. Happy and content. St. Peter will have to push my stuffed butt through the pearly gates. haha.

So what would you all eat. I’m interested to hear. I don’t tag but you are all welcome to play.

TX-THHC-3rd.jpg

Thanks everyone for visiting. I am disappointed that I did not post more in August. I do want to share my trip with my readers. Auditors are here today and making it busy for me. Plus the end of the fiscal year also cranks things up. 12 to Midnight has a lot on my plate too as I have to close July financials and now I need to do August. I have a writing assignment too and the words won’t leak out of my head. Shit. I know what I want to happen. Type it me, type it.  Also editing another project that needs to get done as well.

Oh yeah here are the point totals for the month.
