Recipes Requested

I had a request for some of my daughter’s Thanksgiving recipes. I recall folks wanted to know about the turkey, the zucini, and the scones. If I did not post the recipe you wanted, please let me know and I will put it up another day.

Turkey

She made a brine this year. We never did this before, but it made a very juicy turkey. Not dry one bit.

First she made the brine. This consisted of:

2 gallons of water

cup of sugar

1 cup of salt (kosher)

2 lemons cut in half

4 bay leaves

4 cinnamon sticks

Handful of cloves

She combined all of the brine ingredients in this huge pot we have. It must be 10 gallons. Make sure the sugar and salt dissolve. Then she add the frozen turkey. Ours weighed 13 pounds, and this recipe should work good for any bird in this size. You could put the turkey in your fridge for at least six hours. We did not have room, so the bird stayed out all night. We added ice so it would not go bad. It must have soaked in the brine for close to 18 hours.

When your ready to cook set your oven to 350 degrees F. Put the turkey in a roasting pan, preferably one that has a rack. Take the lemon halves, bay leave, and cinnamon sticks and stuff them inside the turkey. The turkey will take around 3 and 1/2 hours. Baste it every 45 minutes. If part of the turkey starts to become too brown, just wrap that part in aluminum foil.

You can tell if the turkey is done by the juices running clearly and the drum sticks should pull away easily from the bird. If you are in Malaysia you should save the drum stick for Titoki. Remove the turkey from the oven. Wait 20 minutes before carving it.

Zucchini Squares

Mix the following ingredients well:

3 cups of zucchini, thinly sliced

4 slightly beaten eggs

1 cup of Bisquick

1/2 cup of chopped onions

1/2 cup of vegetable oil

1/2 cup of grated Parmesan cheese

1 clove garlic, finely chopped

2 tablespoons parsley, snipped

1/2 teaspoone oregano

1/2 teaspoon salt

1/8 teaspoon paper

Put the ingredients in a 13″ X 9″ X 2″ pan. Preheat the oven to 350 degrees F. Bake for 25 to 30 minutes until it turns golden brown. Cool dish and into squares.

Scones

This recipe is tricky. The first year my girl baked these, they were as hard as a rock. This year they were just wonderful. She says she used more cream than the recipe calls for.

Mix the following together:

1 3/4 cups flour

2 1/2 tsp baking powder

6 tbsp sugar

1/2 tbsp salt

Then slowly add heavy cream. Add 4 tablespoons at a time. Mix real good before adding the next 4 tablespoons. Repeat five times until you have 20 tablespoons added to the mix.

Preheat oven to 425 degrees F.

Shape the mixture into 3″ balls. They do not have to be perfectly round. They just need to stay together. Place the balls on a cookie sheet about 3″ apart. Bake for 16 minutes.

Okay thats it. Try them out. Don’t blame me if you get fat. ;)

  11. Kenny Ng Says:

You not only a rocker but also a good chef!

  12. pinkie Says:

I wonder if we can get bisquick in Singapore…

  13. simple american Says:

Blue Ribbons Hugs for you, your majesty.

    Copy away your majesty.

Snow? I wish your majesty. Because if it was that cold I would stick the bird outside. Though I would be worried about cats, rats, or possums supervising.

The zucchine squares are very easy. She did not use enough zucchine for some reason this year and they were on the thin side and a bit dry. More is better Bkworm. keke Red Ribbon hugs for you! :)

Oh yes LB. You must. Make sure you have help to eat the turkey. That’s a lot of bird. White Ribbon for you. :)

  14. simple american Says:

PY if you come over here I know I can get my daughter to cook some for you. :)

I’m curious if the scones differ a lot from your normal recipe May? Glad you enjoyed the recipes.

We don’t do this everyday YL. We do steamboat somedays too. :)

Non cooking hugs for Angel. Thats okay. I excel at ordering dishes in the restaurant. :)

You can have as much turkey as you want Pink Cotton. Thank you for the Christmas Carole. So sweet. HUGS!

Oh no Kenny. My daughter is the chef. I just copy her recipe book. keke

Bisquick is used for biscuits and pancakes Pinkie. Perhaps you can find a suitable substitute, if Bisquick is not available.

  15. Angeleyes Says:

Hmm… Bisquick… not sure if they sell it here in M’sia… Nvm. will get PiggyBeng to get it in LA next year… hehhee

Thanks for the recipes! I shall try them out soon!

  16. simple american Says:

Cool. Hope the recipes work for you Angeleyes. I think you can substitute Bisquick with whatever flour you would use for quick breads like biscuits or pancakes.

  17. lovin_each_day2002 Says:

I would love to try out the recipes. But then again, I get fat just on water. And breathing.

  18. simple american Says:

The zucchini dish is pretty healthy lovin each day. But I can get fat on water too. :) I get fat just smiling. :) Oops. Two more pounds.

  19. zara's mama Says:

There’s no egg in the scones? Wow..

Maybe this year I can try making my own turkey.. using the Brie your daugther use. I heard over here, we get the temparature gauge that you get too, which will pop out when it’s ready..

  20. simple american Says:

The temperature guage is really nice feature ZM. You don’t want to risk salmonelle when you are pregnant or for Zara either. Good luck with your turkey. :)

  21. lucia Says:

wow! yummy! looks good. but unfortunately i don’t cook. :(

  22. titoki Says:

    HO~ HO~ HO~, I lurve the turkey receipe.

    Thank you Santa American. :)

  23. may Says:

the scones recipe sounds about right, though instead of heavy cream, it’s usually either water or milk. either way, my scones never really come out right, always too flat, humph! might as well just buy them from a nearby bakery, LOL!

  24. simple american Says:

Thanks Lucia. I don’t cook that often either. :)

Good. You gonna try it Titoki?

haha Your scones looked good May. I tell ya though. The first year my daughter did this the scones were hard than my head.

  25. misti Says:

blog visiting is not safe anymore.

    kidding.

she’ll make a good catch someday. *wink* don’t faint so fast again!!!

  26. simple american Says:

What happened misti? Should always feel safe to visit here. Catch what?

  27. {illyria} Says:

gawd. and here i was supposed to eat a salad for lunch. damnit.

  28. fantasyflier Says:

I wonder if the recipe will work for a chicken…..

  29. simple american Says:

Go for the zucchinni {illyria}. :)

Don’t see why it wouldn’t FF. Probably work for 3 or 4 chickens. ;)

  30. Cocka 'Drooling' Doodle Says:

i used to stuff it with chestnuts, potato cubes, peas, and carrots. Then stitch up the gap for good measure so that it won’t open during baking.

  31. ah nel Says:

can post to me those food???

  32. mrs jeff buckley Says:

    she’s pweetty!

and dang i need to learn how to cook lol

  33. christine Says:

I want to try to make the zucchini squares but I wont have time until after the 24th. And on top of that, I suck at cooking!

  34. Shoshana Says:

I am going to try that Zuchinni. It’s perfect with my Lazy Winter Soup.

Also, it seems the easiest one there. Slice, mixed and bake. Just my type of thing. When you have five kids to keep up with, it’s always the fast, the yummy, and preferrably baked. Stove-top anything tends to require more eyes and attention that I have at any given time.

  35. Chen Says:

I get fat already by just looking at the yummy picture..
    how, how? :D

  36. simple american Says:

Sure Ah Nel. But customs will eat it first man.

Its not hard Mrs. Buckley. Just gotta try and burn a few dishes first. keke. Thanks for the compliment.

Just give it your best shot Christine. And the 24th sounds like a great to cook too. :)

Yep, Shoshana. Easy and quick with kids is just great. Give it a couple of years and you can some helpers too. :)

I cannot imagine you getting fat Chen. You seem very health conscious. ;)

  37. Robin Says:

    wow…

happy belated thanks giving… I was LA during thanks giving and was invited by someone for dinner at an Italian resturuant. Not to bad.. all u can eat with fixed menu.

and yes, turkey too. Though I must admit that I am not a great fan for meat.

  38. ah nel Says:

You stick a note on it say its poisonous sure they wont touch it…LOL

  39. simple american Says:

Thanksgiving buffets are very nice Robin. We used to go to those when my parents were still alive.

But then the FBI might question why I send poison to Malaysia. Yikes! 0.0

  40. velverse Says:

the turkey looks like a killer.. and I bet it is a killer. Yum!

  41. Kunstemaecker Says:

OH I’m coming over next year FO SHO!
