Finally the Food Tag
Living in Houston, Texas I get exposed to many different cuisines. The variety might be surprising. But what do I eat when I want to feel like home.
Most uber cravings lead me to cheese enchiladas. This is a Mexican dish, but thats allowed in Texas since we used to be part of Mexico. Texas defeated Santa Anna and kept the tortillas after we gave him the boot. I like the above picture as it shows the proper way to serve a cheese enchilada. For the full experience you must include rice and refried beans. Of course when I ear cheese enchiladas I usually can devour three in one serving. Really fills me up good. But definitely not that healthy when eating out, so I must limit my consumption.
How is it made? Take a large tortilla and sprinkle heaps of cheese over it. Most use cheddar, but monterrey jack or any other sharp cheese is nice inside. Chop up some tomatoes until they are teeny tiny cubes and mix them with kernels of corn. Cover the tortilla with the corn and tomatoes. Get some salsa to spice things up. You can even chop up some chili peppers if your tongue can handle it. Once you have laid all of the ingredients on the tortilla, roll the tortillas and place them on a cookie sheet or pan. Stick in the oven and bake until the tortilla starts to brown. Take them out and smother the tortillas in cheese and put back in the oven for a couple of minutes. Does not take a long time.
I like it that I can purchase whole wheat tortillas. Thus I can make a healthier enchilda. They are nice served with tacos as shown in the above picture too. And guacamole is a winner with any Mexican dish.

I adore mexican food. Though I’ve not had a chance to try cheese enchiladas yet. We don’t much of mexican food here in Malaysia. SIGH.

I like tortila, but have not had a chance to try this cheese enchiladas.
SA: I was already thinking about this meme, because Huisia tagged me earlier. And Giddy Tiger made sure I did not confuse it with another food tag I had done before.
You have to try some cheese enchilada. If you don’t like cheese, they make enchilada with chicken, beef, seafood, and spinach also.

Reading through your comments I noticed you like Tex-Mex better than the Mexican food you get in CA. I was raised in CA but even I prefer the food in Texas. It is so much better. Better grilled, more barracho beans and black beans. mmmmmmm! so the first picture looks like Taco Cabana and the second….well that one is a bit harder. Berryhill has floppy tacos but the beans look similar. Okay I give. Where was it taken? Pappasitos? and don’t even try to tell me you have fiesta ware
Man now I am going to hunt down a mexican restaurant for lunch. Wish me luck because that is quite a mission in KC.

[…] So yes, Simple American, since you’re wondering what kind of food I adore, my vote goes to dim sumbecause of its variety and yumminess of course. Dim sum, which originated from Hong Kong, caters to people of differing tastes; people who like steamed stuff can have the fish balls, siew mais and char siew paus, whereas people who dig fried or baked stuff can choose to have egg tarts, woo kok or prawn fritters, to name a few.  Me? I love enchiladas and my next fav is chimmichangas. I know they are they worse but so good with refried beans, guacomole, rice and sour cream….mhhmmmm makes me drool.
Now I know why my in-laws in TX love Mexican food so much!
